Swiss Water Process — 100% Chemical-Free

Our decaf is processed using the certified Swiss Water Method™ — a completely chemical-free decaffeination process that uses only water, time and activated carbon filters to remove 99.9% of caffeine while preserving the full flavour compounds of the bean. No solvents. No shortcuts. Just clean, honest decaf.

This is the gold standard for chemical-free decaffeinated coffee, and the only method we trust for our beans.

Why Swiss Water Process Matters

Most commercial decaf is processed using chemical solvents such as methylene chloride or ethyl acetate. While these methods are fast and cheap, they can strip flavour compounds along with the caffeine, leaving a flat, lifeless cup. The Swiss Water Process takes a different approach:

  • Step 1 — Green Coffee Extract (GCE): Green (unroasted) coffee beans are soaked in hot water, drawing out caffeine and flavour compounds. This water becomes the Green Coffee Extract — saturated with flavour but not yet caffeine-free.
  • Step 2 — Carbon Filtration: The GCE is passed through activated carbon filters that trap caffeine molecules while allowing the smaller flavour compounds to pass through freely.
  • Step 3 — Flavour-Safe Decaffeination: New green coffee beans are soaked in the now caffeine-free GCE. Because the GCE is already saturated with flavour compounds, only caffeine migrates out of the beans — leaving the flavour intact.
  • Result: 99.9% caffeine-free beans with their full flavour profile preserved. No chemicals. No compromise.

Espresso: Grouphead temp 93°C — Double basket 21g — Out 48g (56ml) — Time 28 sec
Cold Drip: 80g to 850ml filtered, iced water
V60: 10g for single serve
Only use filtered water — tap water spoils great coffee.

The best tasting decaf 💥

I am an avid coffee drinker but when I was pregnant I had to substantially cut back my caffine intake. I tried a few decaf blends but they didn't hit right. I tried Mahalia and oh boy! It was like caffeinated coffee! I still have it now after pregnancy. Best decaf I have tried!
