Why does one coffee taste like bright citrus and another like juicy berries? It comes down to processing — how the coffee cherry is transformed into the finished bean after harvest.
Fully Washed: Cherries are pulped, fermented in water to remove mucilage, then washed and dried. The result is a cleaner, brighter cup that highlights the intrinsic origin character of the bean.
Natural (Dry Process): Whole cherries are dried in the sun on raised beds and raked regularly to prevent over-fermentation. This low-water method allows the bean to absorb the natural sugars from the cherry, producing explosive berry, tropical fruit and wine-like flavours.
Pulp Natural (Honey): A hybrid — pulped but with mucilage left on during drying. Produces a sweet, caramel-forward cup with balanced acidity.
