Blue Bianca is a remarkable coffee grown by smallholding farmers on the highland plateau of Onang Ganjang, Sumatra. Each step in its journey reflects the care and craftsmanship of local producers. The cherries are handpicked at peak ripeness, pulped, and naturally fermented for 12 hours, followed by a meticulous process of wet hulling, known as Giling Basa—a technique unique to Sumatra that enhances the coffee's deep, complex flavours. After drying for five days and being hand-sorted, the beans are rested for 30 days to further develop their rich profile.
