Roast level is one of the biggest factors in how your coffee tastes, often more important than origin or brew method. This guide breaks it down simply: what each roast does to flavour, who it suits best, and how to choose the right one for your daily cup.
What Roasting Actually Does
Green coffee beans are grassy, soft, and undrinkable. Roasting triggers a cascade of chemical changes:
- Moisture evaporates and the bean expands dramatically.
- Maillard reaction — which accelerates around 150°C — sees amino acids and sugars reacting to create hundreds of new flavour compounds, including the toasty, nutty, and caramel notes we love.
- First crack (~194°C) signals the start of light roast territory.
- Sugars caramelise further, building sweetness and body.
- Second crack (~216°C) marks darker roasts, where oils surface and roast character dominates.

Medium Roast: Balanced & Versatile (Our Sweet Spot)
The most popular category for good reason. Roasted between first and second crack, medium roasts balance origin character with developed sweetness and body. Acidity softens while complexity remains.
