East Timor: A Young Nation With Deep Coffee Roots
Officially Timor-Leste, East Timor gained independence in 2002. Yet coffee has been part of life here since Portuguese colonists introduced it in the 19th century. Today it remains the country’s most important export, supporting tens of thousands of smallholder families in the mountainous interior.
What sets East Timorese coffee apart is its high-altitude growing environment. Farms sit between 1,200–1,800 metres, where cooler temperatures slow cherry ripening. This extended development time concentrates sugars and creates the clarity and sweetness that specialty buyers love.
The Maubisse Region: Small Farms, Volcanic Soils, Traditional Methods
Maubisse, in the central Ainaro district, is one of the country’s premier coffee areas. At around 1,400 metres, it enjoys cool nights, consistent rainfall, and nutrient-rich volcanic soils.
Farming here is almost entirely smallholder: families caring for a few hectares using methods passed down through generations. The trees grow under a diverse shade canopy of native forest trees, which protects the soil, supports biodiversity, and further slows ripening for more complex flavours.
The result? Coffees that taste clean and vibrant rather than heavy or earthy, a signature of well-grown East Timor lots.
Flavour Profile: Bright, Floral & Approachable
We roast this lot to a medium profile that lets the origin shine. From our most recent cuppings of the 2025/2026 harvest:
- Aroma: Delicate floral notes, jasmine, orange blossom, and ripe stone fruit
- Flavour: Peach and apricot, gentle citrus brightness, soft floral undertones, and a honeyed sweetness
- Body: Medium; silky and refined
- Acidity: Bright yet smooth, refreshing without sharpness
- Finish: Clean, sweet, and lingering

- Ratio: 1:15–1:16 (15–16g coffee to 240ml water)
- Water temp: 93–94°C
- Grind: Medium-fine
- Technique: 30-second bloom with 2–3x coffee weight, then gentle spiral pours over 2:15–2:45 total brew time
