How to Store Coffee So It Stays Fresh for Weeks (Not Days)
One of the questions I get asked most often is how to keep coffee tasting as good as the day it arrived. Even the best beans can lose their magic quickly if not stored properly. Here is the practical advice I give every customer who wants their Mahalia coffee to stay fresh for weeks, not days.
The biggest enemies of fresh coffee are oxygen, light, heat, and moisture. Once the bag is opened, air starts to steal the flavour compounds that make your coffee taste bright and complex. That is why I always tell people to treat freshly roasted coffee like fresh bread or herbs: keep it protected and use it while it is at its best.
The best way to store whole bean coffee
When your Mahalia bag arrives, reseal the zip-lock immediately after taking out what you need for the next few days. Our bags are designed with a strong zip-lock and one-way valve to help keep oxygen out.
For even better results, transfer the beans into an airtight container with a one-way valve (or a simple airtight jar) and store it in a cool, dark cupboard away from the oven, kettle, or window. Whole beans stay fresh for 3 to 4 weeks after roasting.
Ground coffee
Ground coffee loses freshness much faster, so I recommend grinding only what you need right before brewing. If you must pre-grind, use it within 7 to 10 days.
The freezing question — and the science behind it
Yes, you can freeze coffee, but only whole beans and only if you do it correctly.
When you freeze beans, the low temperature dramatically slows down oxidation and the loss of volatile aroma compounds. The cold essentially puts the staling process on pause, which is why many roasters and serious home users freeze beans for longer-term storage.
However, there is real science to be aware of. Coffee beans contain a small amount of moisture. When frozen, that moisture forms tiny ice crystals. The biggest risk happens when you take the beans out of the freezer: warm room air hits the cold beans and condensation forms on the surface. That extra moisture can lead to uneven extraction, muted flavours, or even slight staleness once you brew.
The correct way to freeze
- Portion the beans into small airtight containers or freezer bags before freezing.
- When you need some, take out only that portion and let it come fully to room temperature while still sealed.
- Only open the container once the beans have completely thawed.
- Never refreeze the beans.
Done this way, freezing is a safe and effective way to keep coffee fresh for months.
